Produced by Shady Bader of Finca El Vergel or Black Mountain, an inactive volcano that has created some of the most nutrient-rich soil for planting.
A few years ago, Shady and his brother Elias took over the farm and decided to convert part of their vegetable farm to coffee. 5 years ago, they planted their first Geisha and Java trees and only 2 year ago, the decided to expand their coffee plantation.
This lot was exposed to a dry anaerobic fermentation of 48 hours inside plastic tanks with CO2. The coffee was then placed inside a mechanical dryer for 12hrs and later moved on to raised beds until ideal moisture content was achieved.
