1:16 Coffee to Water Ratio
Grown by Huver at Finca El Paseo, Huver Castilla joined the Cooperative de Cafes Especiales de Narino in 2015, the same year he started selling his first micro lot.
This coffee is harvested following strict ripeness criteria, later floated and hand-sorted to remove any defects. Cherries are exposed to 30 hours of underwater fermentation before being de-pulped. Parchment is gently washed and dried under temperature-controlled conditions until ideal moisture content was achieved.
This micro-lot is 100% Castillo.
